Viking oven repair: what to know
When we open up a Viking oven, the design tells us where to look: Viking wall ovens and range ovens include gas and electric convection models, with infrared broilers on many professional ranges.
Most calls for Viking ovens come down to oven bake igniters, gas safety valves, convection fan motors, or door hinges. From the owner's side, the usual signs are these: oven slow to ignite, not reaching temperature, and door sagging. If the gas oven takes several minutes to light, watch the igniter; a glowing igniter that never lights the burner is weak and needs replacing. A gas oven that takes a long time to light usually has a weak igniter that cannot draw enough current to open the valve.
Viking gas ovens use a hot-surface bake igniter and a gas safety valve that only opens once the igniter draws enough current, so a slow-lighting oven is usually a weak igniter. Infrared broilers on professional ranges have their own igniter and burner. Convection fan motors and heavy door hinges are common wear items.
In coastal kitchens without air conditioning, a hot oven running for hours raises the room temperature enough to affect the cabinetry around it, especially in a built-in installation. We check the bake and broil circuits separately, because they fail independently.
When a Viking oven runs hot or cold against the dial, the thermostat or temperature sensor has usually drifted out of calibration. For the door hinges, as for any repair, the price is agreed in writing first.
Keep the door gasket clean and intact; it is the cheapest way to hold temperature. If you are seeing oven slow to ignite, or anything else off with your Viking oven, book a visit and we will confirm the cause before quoting.
