Vulcan oven repair: what to know
As background for Vulcan oven owners, Vulcan builds gas and electric convection ovens, often double-stacked, plus the standard ovens under its restaurant ranges.
Look first at convection fan motor, oven thermostat, gas safety valve, and door switch; those are where Vulcan ovens tend to give out. On a service call, the description is usually one of these: oven not heating, fan not running, and temperature drifting. If a Vulcan convection oven heats but bakes unevenly, check that the fan comes on and stops when the door opens, since the door switch controls it. If the oven heats but will not reach temperature, check whether the bake or broil element has a visible break or blister.
Vulcan convection ovens use fan motors that shut off when the door opens, so a door switch fault can stop the fan and cause uneven baking. Gas models use safety valves and thermostats that must work together, and a failed thermostat can cause temperature swings. These commercial ovens are built for heavy use, so repairs are usually worthwhile.
Commercial ovens in San Diego restaurants run long hours in already-hot kitchens, and thermostats, igniters and door gaskets wear accordingly. An oven visit starts with a temperature test, then elements or igniter, sensor resistance and the control.
A Vulcan range burner that will not stay lit usually has a dirty pilot or a failing thermocouple. You approve the price for the oven thermostat, or whatever the diagnosis finds, before we start the repair.
Replace the door gasket if it is torn or flattened; heat loss makes the oven work harder. Temperature drifting is a repair worth booking sooner rather than later on a Vulcan oven.
